Dried beans were once a staple of southern food, largely because they supplied protein when meat wasn’t available or affordable. Now many folks appreciate dried beans for their flavor and health benefits. My husband loves just about every type of dried beans, but pintos are his favorite.
Southern-Style Pinto Beans Recipe
Ingredients:
- 1 bag dried pinto beans (1-pound size)
- 6 strips bacon, chopped
- 1 slice cured ham, diced
- 1 small onion, diced
- 1 can chicken broth
- Salt, to taste
- 1 tablespoon hot sauce
- 2 teaspoons black pepper
- 1 teaspoon sugar
- 1 teaspoon cayenne
- 1 teaspoon minced garlic
Directions: Pour beans into a colander and place under cool running water. Remove any shells or debris. Cover beans with 3-4 inches of water in a large stock pot and bring to a boil. Boil gently for 3 minutes and remove from heat. Cover beans and allow to soak overnight at room temperature.
The next morning, drain the beans and cover with cool water. Place over medium-low heat.
In a skillet, cook bacon and ham until almost done. Add onion. When meats are done, add contents of the skillet to the bean pot. Add chicken broth, salt, hot sauce, black pepper, sugar, cayenne, and garlic. Cover pot and cook beans for several hours, to desired texture.
